Grown in our west field past the old stone wall, a rare varietal originating from the Gaillac region in Southwest France and is a top recommended grape to grow in Virginia. The grapes are typically harvested early November, then fermented and aged 18 months in French oak barrels. The results are subtle notes of spice and berry flavors with an earthy mid-palate. A great wine to pair with a Filet Mignon or on its own in a bubble bath!
Fun Fact: A sister varietal to Malbec, Hillsborough has the largest acreage of Fer Servadou in the Nation.
